Since we've been living here in Denmark, we've added many new traditions alongside our old ones. Some are typically Danish, while others have simply developed naturally for us. This cake is one of those new traditions.
It's quick to make, and that works perfectly for us. Michael is heavily involved with the church over Easter and practically working around the clock. I'll be joining him here and there. At the same time, I also sing in the choir and have a few commitments of my own.
On Easter Sunday, we're out and about at Påskefrokost at midday and in the afternoon. That's why we enjoy this delicious cake nice and relaxed already at Easter breakfast.
Here's the recipe:
Easter Cake 2026 Cinnamon Swirls in Cake Form
Makes about 15 slices
Prep time: about 25 minutes Baking time: 45-50 minutes
Ingredients
Dough • 230 g flour (Type 405) • 1 tsp baking powder • ½ tsp coarsely ground cardamom • 3 eggs (size M) • 200 g sugar • 150 ml sunflower oil (plus some for the pan) • 75 ml water • 3 tsp cinnamon
Cinnamon Layer • 50 g sugar • 3 tsp cinnamon
Glaze • 150 g powdered sugar • 2 tsp cinnamon • 2-3 tbsp milk
Also needed • Loaf pan (about 21 cm) • Piping bag
Instructions 1. Preparation Preheat the oven to 180 °C (350 °F) with top and bottom heat. Put flour, baking powder, and cardamom in a bowl. Add eggs and sugar and stir everything into a thick batter.
Then fold in the oil and water until you have an even dough. Take out about a third of the dough and mix it with 50 g sugar and 3 tsp cinnamon. 2. Layering and Baking Grease a loaf pan. Fill the dough alternately: add some of the plain dough and some of the cinnamon dough in the middle on top of each other.
The dough will distribute itself during baking. Bake the cake for 45-50 minutes. Toward the end, check with a wooden pick to see if it's baked through. Then let it cool a bit, first in the pan, then on a wire rack. 3.
Applying the Glaze Stir together the powdered sugar, cinnamon, and milk until smooth. The consistency should be creamy, like toothpaste. If needed, carefully add a bit more milk. Fill the glaze into a piping bag and drizzle it over the still slightly warm cake so it runs on top and drips down the sides a bit.
Let it dry.
Your Easter cake is ready—it looks like a cinnamon swirl on the outside but is wonderfully moist like a classic loaf cake inside. Have fun baking and enjoy! Rigtig god påske!
